Region – Champagne – Vindey, Montgueux, Fravaux
Grape Varieties – 70% Pinot Noir, 30% Chardonnay.
Harvest and vinification – The harvesting is by hand, the freshly picked grapes are transported in refrigerated trucks then pressed with great care in pneumatic presses. Fermentation is in stainless steel tanks, each terroir and plot are vinified separately before blending. Fermentation is at low temperature (12-13°C), then malolactic fermentation.
Dosage – 6g/lt: Brut. (Hence the name of the Champagne: ‘6g’)
Aging – In bottle on its lees
Vegan – Yes
Pale in colour with green highlights, typical of Chardonnay. On the nose lively and zesty, brioche with persistent fruity fragrances. On the palate, the attack is dry, forceful and impressive. Elegant, small bubbles amuse the palate. Butter and brioche aromas confirm the lengthy aging (3 years) in the bottle. The aftertaste is long and pleasing. (Simon)
