Harvest & Vinification – The harvesting is by hand, the freshly picked grapes are transported in refrigerated trucks then pressed with great care in pneumatic presses. Fermentation is in stainless steel tanks, each terroir and plot are vinified separately before blending. Fermentation is at low temperature (12-13°C), without malolactic fermentation.
Dosage – 6g/lt: Brut.
Aging – in bottle on its lees
Vegan – Yes
Bright and golden, the wine is effervescent and lively. On the palate crisp and refreshing, and the finish pleasingly long. The wine works perfectly as an aperitif, or as an accompaniment to your shellfish or smoked fish. (Simon)
