Harvest & Vinification – The harvesting is by hand, the freshly picked grapes are transported in refrigerated trucks then pressed with great care in pneumatic presses. Fermentation is in stainless steel tanks, each terroir and plot are vinified separately before blending. Fermentation is at low temperature (12-13°C), then malolactic fermentation.
Aging – 7 years on its lees in the cellar.
Dosage – 5g/lt: Extra Brut.

Tasting notes
Clear and bright, the Champagne is lively with fresh fruit aromas. On the palate crisp and zingy, this is a wine equally pleasing as an aperitif or accompaniment to seafood and fish. Lengthy aftertaste is clean and pleasing.
