Harvest & Vinification:
The first juice using a pneumatic press. Cold settling at 15°C, followed by alcoholic fermentation at a controlled temperature (18-19°C maximum to conserve the aromas of the wine)
In stainless steel vat on fine lees.
This white opens with lovely aromas of orchard fruits of pear and apple with melon. Giving way to nuances of gunshot (typical of ‘Silex’). Very supple and round on the palate with pear and melon creating a long refreshing finish.
Shellfish, grilled fish – sauce as well.
