Region – Maconnais region of Burgundy
Soil – Limestone-clay.
Grape Varieties – 100% Chardonnay.
Harvest & Vinification – Grapes harvested and sorted by hand. The juice is pressed and settled before undergoing slow fermentation in oak barrels at 12-20°C.
Aging – 6 months in oak barrels; on the lees.
Vegan – yes
A deep gold colour with flecks of green. Strong notes of citrus and white flowers and, more subtly, honey. Its texture is opulent, well structured and, thanks to the wine’s natural richness it is very full in flavour. Oak-ageing gives a creamy roundness. The finish is long.
Pair with fish, shellfish and white meats, any with a creamy sauce (frogs legs also, we’re told – when in Rome)!
