Vineyard size: 5 hectares. 3-5,000 botttles
Grape Varieties – 50% Sauvignon Blanc, 50% Sémillon.
Harvest & Vinification – Grapes harvested mechanically and rigorously hand-sorted. Gentle pressing and cold clarification. Fermentation in barrels and thermoregulated stainless steel vats.
Aging – In barrel (new and 1-year) for 9 months with lees stiring.
A rich, golden colour with copper/green tints, gives way to a complex aroma of wild flowers, exotic fruits and honey. These flavours remain on the palette, and the body is soft, silky and round. A serious wine with a long, persistent finish.
Quite a robust wine, pair with fish – mackerel, monkfish, or poultry
