The grapes are pressed slowly and gently to extract the juices (max 1.8 kg). The 3 levels of the chai allow liquid to be transferred easily by gravity. 25% of the wine is vinified in 2 year old oak. after bottling, the wine rests on its lees for 18-24 months before disgorging.
This Vouvray has a pale, bright yellow hue, with a smooth milkiness on the palate at first followed by an explosion of fresh fruit aromas. The finesse of the bubbles is excellent. With 10 grms of residual sugar, this Vouvray has no dosage.
Fabulous as an aperitif or to accompany shellfish.
