Harvest & Vinification :

Mechanical harvest with intense table-top sorting.

The harvest is gravity-fed into vat and extraction takes place using traditional method of pumping over. After post-fermentation maceration, the wine is run off.

Aging: 

Following the malo-lactic fermentations, the wine is aged in barrels of one or two wines for about 12 months.

This wine will perfectly accompany cold cuts, red or white meat, barbecued meats or cheese.
