Harvest & Vinification :
Mechanical with intense table-top sorting .
The harvest is gravity fed into vat with extraction taking place using traditional method of pumping-over. After post-fermentation maceration the wine is run off.
Following malolactic fermentations, part of the wine is matured in barrel for 12 months, the rest in vat.
Food and wine pairings :
This wine will perfectly accompany red or white meat, barbecues or cheeses.
